  • 1 can (15 ounces) pumpkin puree
  • 1 cup vegetable broth
  • Salt and pepper to taste

  1. In a large pot, heat olive oil over medium heat. Add the diced onion, minced garlic, and diced red bell pepper. Sauté until the vegetables are tender and fragrant.
  2. Add the ground cumin, chili powder, smoked paprika, dried oregano, and cayenne pepper (if desired). Stir well to coat the vegetables with the spices.
  3. Add the drained and rinsed kidney beans, black beans, diced tomatoes, pumpkin puree, and vegetable broth to the pot. Season with salt and pepper to taste.
